For me, there's no question: Mì Quảng, the complicated noodle dish.Others are mực chiến giòn, bánh xèo, which I had tonight, bún bò Huế, cánh chưa cá bong lau.

Don't know why but I was craving that nem nuong place I ate at 12 years ago. It was at the corner in Can Tho. You had to wrap the nem nuong in leafy stuff.

Man if I ever go back to Can Tho I'm going to hunt that place down if it's still open.

I'm a huge banh xeo fan. I like the banh xeo in Vietnam more. The ones over here seem more commercialized. Sorry mom.

My favorites are bun cha ha noi, banh khot, and so many types of banh mi.

There are lots of other things I like but I just don't know the names.

It's nem nuong Thanh Van, on the corner of Hoa Binh and Nam Ky Khoi Nghia.

There was one place in Seattle served b煤n cha H脿 Nội. It was on the way back from the office where I was taking private lessons after I was too far along in the class to assemble one. Agreed. A fantastic dish.

I just had the rest of the b谩nh x猫o as a late snack. Incredible, especially with all the leaves.

Anything made by Madame Lirelou is great. Better than anything I've had in Vietnam or in other homes here in the U.S.. Living in Florida gives us the advantage of Asian markets and produce. We have Bun Xeo several times a month. She made Cha Gio two nights ago to bribe her doctor, so we had Bun Cha Gio with freshly fried cha gio that night and yesterday. The Thai Basil and other mints we grow in the yard, along with lemon grass and papayas.

One advantage of my military career was that each post had a small group of Vietnamese wives from various parts of Vietnam, who would hang together, trade recipes, and get together for communal meals. Kim learned to make Bun Bao from a friend and I far prefer her Bun Bao over any commercial variety. She always insists on Alsatian yeast, quail or duck eggs, high grade chinese sausage, and if she puts in ground pork with chitterlings she pan grills it before hand with a red chinese barbecue seasoning and drains the fat before adding it to the bun bao.

I believe every Vietnamese monk and priest who passed through Seoul between 2001 and 2007 ended up at my house for meal. One night we even had some visitors from the VN embassy, who had tagged along with a Viet-American diplomat.

Fresh spring rolls. Simple but delicious. In US when entertaining guests I always served up sushi, hot pot or spring rolls. There's an endless variety to make and people can customize it however they please.
