La Ceiba if you like a tropical town.

La Esperanza if you like cool temperatures and cultural town.

Siguatepeque, if you like cool temperatures and a town larger and not as far out of the way as La Esperanza.

Valle de Angeles and Santa Lucia, if you like cool typical towns near the capital,聽 Tegucigalpa.

Cop谩n, if you like to be near the Maya ruins and be in a quaint tourist town.

You left out Tela. Beautiful beaches (better than Ceibas), Monkey Lagoon, Punta Sal National Park, Izopo Wildlife reserve. I dont know about the new hotels and condos though...
Tela is laid back, nice atmosphere
