we actually live in the small hamlet of Atalaia. Retired expat couple looking for an English/speaking maid to do laundry and light housework, like house and garden cleaning and care, simple cooking, and help in watering the garden. We have no pets, children and little visitors and we are retired professionals with simple retired lives.

I am quite sure that you will find somebody that will take on this job, especially as you are willing to pay quite a large amount of money every month. However, I wonder whether you will have to formally employ the person working for you and whether you need to pay into the Social Security system including the NHS of Portugal for your "employee".
