My name is Jos茅 Bol铆var and I am a professional ham cutter in Malaga. Although ham has always been part of my life, it was around 2005 when I began to feel true interest in the art of cutting ham with a knife. Since then my curiosity about the culture of ham has been growing and it has been the profession to which I have dedicated a large part of my life, making it my passion. Consolidated as a professional at El Corte Ingl茅s with more than 9 years of experience, hundreds of hams from recognized brands have passed through my hands, which has provided me with extensive experience and knowledge about the world of Iberian ham. I have been a ham cutter at events in Paris, Berlin and Japan. Being in Japan where I have had the fortune to live for several months of my life, which has helped me to deeply learn its culture, customs and tradition.
